Today we are preparing tender and very juicy chicken cutlets, which contain cottage cheese. The result is a nourishing, aromatic and very tasty second course that goes well with almost any side dish. Serve these delicious and golden-brown chicken cutlets with mashed potatoes or just boiled potatoes, rice, pasta, and cereals.

Due to the fact that this second dish includes chicken breast, it will not take much time to prepare the cutlets. Thanks to the addition of cottage cheese of any fat content to the minced meat, this meat dish will pleasantly surprise you with its juiciness and tenderness. Chicken cutlets can be breaded not only in breadcrumbs, but also in flour - this is purely a matter of taste.

Ingredients:

(500 grams) (200 grams) (1 piece ) (1 piece ) (30 grams) (1 clove) (3 branches) (50 milliliters) (0.25 teaspoon) (1 pinch)

The recipe for chicken cutlets that we will prepare today includes the following ingredients: chicken fillet (in my case, chicken breast), cottage cheese, chicken egg, onions, fresh garlic, dill (or other herbs to taste), breadcrumbs (I make my own at home). cooking), salt, ground black pepper and refined vegetable oil (I use sunflower) for frying.


For me personally, the most convenient way to make minced chicken is not with a meat grinder, but in a food processor (the attachment is a metal knife). Then you can simply combine all the necessary ingredients in a container and beat them until smooth. If you don't have a food processor, pass the chicken fillet through a meat grinder.


Peel a medium onion and a clove of fresh garlic, then grate it into a paste on the finest grater. Chop fresh herbs (in my case dill) finely and finely with a knife.


Now we need to thoroughly mix the minced chicken, chopped onion, garlic and herbs. In addition, add cottage cheese, chicken egg, salt and ground black pepper. You can knead the minced meat for chicken cutlets by hand, but a food processor can do it in a matter of seconds.


The result is relatively homogeneous minced meat for chicken cutlets. By the way, if you love and often cook chicken fillet cutlets, you probably know that the minced meat turns out sticky and you need to form the cutlets with your hands moistened with cold water.


Pour breadcrumbs into a flat dish or plate and roll the pre-prepared cutlets into them. I got 7 medium sized pieces. Choose the shape yourself - you can make it round, triangular or oblong (like mine).

In itself, it is a very healthy fermented milk product, containing many substances valuable to the human body: calcium compounds, B vitamins, milk proteins and fats. You can cook various dishes with cottage cheese, not only pastries and desserts, but also cutlets.

Cottage cheese in meat cutlets will add health benefits to them (milk protein + calcium compounds), and with cottage cheese they will be of interest to fasting people and vegetarians of various kinds. We'll tell you how and what kind of cutlets with cottage cheese you can prepare.

Recipe for chicken cutlets with cottage cheese

Ingredients:

  • chicken fillet (meat from the breast and/or thighs) – about 500 g;
  • chicken eggs – 2-3 pcs.;
  • fresh natural cottage cheese of medium fat content – ​​200-300 g;
  • very little ground dry spices (black pepper, coriander, grated nutmeg);
  • various fresh greens for decoration.

Preparation

The meat should not be wet (rinse and dry with a clean napkin). Pass the meat through a meat grinder with a medium attachment (you can add an onion, but not necessary). Add cottage cheese, eggs and some spices, maybe add a little salt. Mix thoroughly with a fork. And with wet hands, using a tablespoon, form cutlets.

Next, we either bake the cutlets with cottage cheese in the oven, placing them on a greased baking sheet for 30-40 minutes. Or boil them in a double boiler for 20-25 minutes (which is preferable). You can serve the cutlets with any side dish (rice, young beans, boiled potatoes, chickpeas, buckwheat, any cereal porridge, pasta) and some light sauce. We decorate with greenery.

Following the same recipe, you can prepare cutlets from young beef with cottage cheese, you can also mix minced chicken with beef and/or minced turkey.

Fish cutlets with cottage cheese can be prepared approximately following the same recipe (see above). It is better to choose low-fat fish. Pike, pike perch, hake, cod, pollock, and pollock are suitable. If the fish is frozen, you need to defrost it and drain the remaining liquid. Fish cutlets can be coated in flour or breadcrumbs and fried, steamed or baked. Fish cutlets naturally cook faster than meat cutlets.

Recipe for carrot cutlets with cottage cheese

Ingredients:

  • carrots – about 400 g;
  • fresh natural cottage cheese of medium fat content - about 300-400 g;
  • chicken eggs – 2-3 pcs. (or grated hard cheese - about 100-150 g);
  • some spices (for example, curry mixture);
  • whole grain flour (wheat, buckwheat, oatmeal, rye or a mixture).

Preparation

Grate the carrots on a fine grater, squeeze a little and add cottage cheese, grated cheese and/or eggs (for better gluing), spices and a little flour.

We form cutlets with our hands and bread them in flour. Next, fry the cutlets, or steam, or bake in the oven for 25-30 minutes at a temperature of 180-200 degrees C. Serve carrot cutlets with cottage cheese with any side dish, or with meat or fish dishes.

Potato cutlets with cottage cheese

Ingredients:

Boil the potatoes in any way and mash them. Add cottage cheese, finely chopped dill, eggs or cheese, and some spices to the puree. Mix everything thoroughly and form cutlets. Next, fry them in a frying pan or steam them, or bake them in the oven for 20-25 minutes.

You can add minced fish or chicken to the same original potato-curd mince - it will turn out delicious. These cutlets can be served without a side dish.

I would never be able to believe that cutlets with the addition of cottage cheese come out with such an extraordinary taste. But after I prepared them myself according to this recipe, I was simply delighted with them. Despite the unusual combination of ingredients, the cutlets turn out very tender and incredibly tasty. They are very simple and quick to prepare; the cooking method is almost classic and traditional. It is best to use mixed minced meat for cooking (pork + beef), you choose the fat content of the cottage cheese as desired, I add homemade, which I make myself. These delicious cutlets are best served with a vegetable side dish or a portion of a good fresh salad.

Cooking method

Three onions on a coarse grater or chop very finely, mash the cottage cheese with a fork so that there are no large lumps and add everything to the minced meat. Salt and pepper to taste and mix well until smooth, lightly beating the minced meat on a bowl or tossing it from hand to hand. With slightly damp hands, form cutlets (do not make them large), bread them in breadcrumbs and fry in the usual way in a frying pan in vegetable oil. Cook them on both sides for a few minutes until cooked and nicely browned. I don’t simmer the fried cutlets additionally under the lid; they have time to fry until fully cooked. Bon appetit.

1. Finely chop the dill and onion. The finer the onion is chopped, the more tender the cutlets will be.


2. Mix minced chicken with egg, cottage cheese, chopped onion and herbs. Mix vigorously. Add salt and pepper to taste.

Keep in mind that the more intensely you knead the minced meat, the fluffier and tastier the dish will be.

3. Form balls. A little trick will help you here. If you wet your hands with water, it will be much easier to form the correct shape. Place the balls on a plate with breadcrumbs and dip generously.


4. Fry in a well-heated frying pan on both sides. The amount of oil depends on your preference, but I recommend simply brushing the pan.

This will be enough for the cutlets to be well fried, acquire an appetizing golden crust, but not be overly fatty and heavy.


5. Pour in cream and let simmer under the lid for 10 minutes.


6. You can serve with greens, stewed zucchini or other dietary side dish.
