Ingredients:

  • walnuts – 245 g;
  • fresh cherries or raisins - to taste;
  • flower honey – 3.5 tbsp. spoons.

Preparation

So, we free the walnuts from the shell, twist the kernels through a meat grinder and pour them into a bowl. Add chopped pitted cherries or steamed raisins. Season everything with honey and mix thoroughly. The nut filling is ready and you can start kneading the roll.

Recipe for nut filling for rolls

Ingredients:

  • flour – 220 g;
  • sugar – 205 g;
  • butter – 205 g;
  • walnuts – 215 g.

Preparation

To make the filling, sift the flour, pour it into a thin layer into a hot frying pan and, stirring with a spatula, fry it until light brown. After this, pour the flour into a cup and cool. Grate the butter on a coarse grater, add sugar and mix. Brown the peeled nuts in a dry frying pan and mix with the butter mixture and flour. We use the finished filling as a filler for the roll.

Nut filling with apples for a butter roll

Ingredients:

  • sugar – 175 g;
  • ground cinnamon – 10 g;
  • butter – 105 g;
  • egg – 1 pc.;
  • walnuts – 175 g;
  • apple – 75 g.

Preparation

Pour sugar, ground cinnamon into a saucepan, add butter and egg. Place the dishes on low heat and cook until thickened. Then remove from the stove, add carefully chopped nuts and diced apples. Mix thoroughly and leave the filling at room temperature.

Poppy-nut filling for roll

Ingredients:

  • walnuts – 105 g;
  • raisins – 55 g;
  • dry poppy seed – 75 g;
  • water – 285 ml;
  • sugar – 85 g;
  • ground cinnamon - a pinch;
  • lemon zest – 1 teaspoon;
  • semolina – 10 g.

Preparation

We wash the poppy seeds, add water and boil for half an hour under the lid. Then drain the remaining liquid and grind the poppy seeds and sugar through a meat grinder. Soak the raisins in warm tea for 10 minutes and then dry. Brown the nuts in a dry frying pan and crush them using a rolling pin. Grind the lemon zest and mix with a spoonful of sugar and cinnamon. Now combine all the ingredients in a bowl and mix thoroughly.

How to make nut filling for a roll?

Pour the milk into a bowl, add sugar, honey and heat over low heat. Then pour the hot mixture over the ground nuts, add grated lemon zest, vanillin and mix in the nut filling.


To bake a roll with nuts I will need: shortcrust pastry and nut filling.

For shortbread dough you need:


Wheat flour – 300 grams (2.5 cups);


Butter margarine - 200 grams (margarine can be replaced with butter - depending on what you like best);


Egg – 1 piece;


Sugar – 100 grams;



For the nut filling:


Shelled walnuts – 1 cup;


Sugar – 1/2 cup (for making powdered sugar);


Egg whites – 2 pieces;

How to make a roll with walnuts, photo

To cook roll with nut filling You need to prepare shortcrust pastry for the roll and make nut filling. Then place this filling in the dough, from which you roll it into a roll.


First, I prepare shortcrust pastry for the roll with nut filling. Photos and a recipe for how to prepare shortcrust pastry for rolls with nuts are described in great detail and shown in my article “”.


Therefore, I will not repeat myself, but will immediately move on to preparing the nut filling for the roll, since the shortbread dough I prepared for this roll is already in the refrigerator.


To prepare the nut filling, pour the peeled walnuts into a frying pan and fry for 10 minutes in a hot oven at a temperature of approximately 160 - 180 degrees. Then I pass them through a meat grinder.



I grind sugar in a coffee grinder and get powdered sugar. This is much more practical than buying the same powdered sugar in the store. I break the eggs, separate the whites from the yolks and put them in a bowl, add powdered sugar and vanilla.



I beat all this with a mixer until a thick, fluffy mass is obtained.



I mix the resulting protein mass with nuts passed through a meat grinder and mix.



Then I take the shortbread dough out of the refrigerator.



Roll out the dough with a rolling pin into a rectangular layer, 0.5 cm thick.



I spread the protein-nut filling onto the rolled out dough and distribute it over the entire surface of the dough. I don’t put all the filling, but leave 3 tablespoons of filling for greasing the roll after baking.



After laying out the filling, I roll it up.



I put the prepared roll on a baking sheet and put it in an oven preheated to 180 degrees. Baking time for the roll is 35-40 minutes.


5 minutes before the end of baking, take out roll with nut filling from the oven, grease it with the remaining cream, sprinkle additional walnuts on top and put it in the oven for another 5 minutes.



After the time has passed, I take it out ready roll with walnuts from the oven, let it cool a little and transfer it to a dish, on which I cut it into portions and serve.

Holidays such as New Year and Christmas occur in winter. Therefore, there is a reason to invite guests or visit your family and friends yourself. Of course, on this occasion the table is set and delicious dishes are prepared. You can make a nut roll as a sweet dessert.

There are a huge number of recipes for its preparation. All that remains is to choose one of the proposed options.

Apple-nut roll

Ingredients:

  • chicken eggs -5 pieces;
  • sugar - 100 grams;
  • a glass of flour;
  • baking powder - one sachet;
  • vegetable oil - a teaspoon.

2. Filling:

  • one kilogram of apples;
  • butter - 40 grams;
  • sugar - 100 grams;
  • walnuts - one glass;
  • raisins - 2 cups;
  • a pinch of cinnamon.

Preparation:

The nut filled roll starts with preparing the apples. They are cored. Then grate it on a coarse grater and put it in a frying pan with pre-melted vegetable oil. Then add sugar, raisins and cinnamon. Simmer for ten minutes, stirring constantly. Then finely chop the walnuts with a knife.

Now you can start preparing the dough. To do this, add baking powder to the flour and mix everything well. Then beat the eggs with sugar, adding five tablespoons of boiling water during the process. After that, flour and baking powder are added, the mass is mixed, and then poured onto a baking sheet. It is important to cover it with baking paper first. Bake for fifteen minutes. Remove, sprinkle and top with apple mixture. Wrap the nut roll using the paper it was baked on.

Roll with nut filling

  • one glass of milk;
  • two tablespoons of sugar;
  • ten grams of dry yeast;
  • one egg;
  • a pinch of salt and vanillin;
  • butter - 50 grams.

Yeast dough is kneaded. Here milk, sugar, yeast, egg, salt, vanillin and butter are combined. Then everything is placed in a warm place. When the mass rises for the third time, you can already roll it out. A special paper is taken on which the layer is rolled out. Then the nut filling is laid out on top of it and a roll is made. Moreover, its edges need to be connected. After that, cut the roll in a circle and unfold the resulting parts. Then everything needs to be left for half an hour for the dough to finally rise. Then you can brush with beaten egg and bake for forty minutes.

  • three glasses of walnuts;
  • one glass of sugar;
  • a tablespoon of butter.

Nuts, previously chopped with a knife or in a blender, should be fried. Then add butter and powdered sugar to them.

  • butter - 50 grams;
  • a tablespoon of powdered sugar;
  • a glass of milk.

The butter needs to be melted, mixed with milk and powdered sugar. Then cool the mass and then put it in a little bag. Trim the tip so that you can decorate the roll with nut filling with a mesh. The recipe is actually simple, it takes a little time to prepare, but the dish turns out very tasty.

Hungarian roll

Opara. You will need half dry yeast, two tablespoons of sugar and half a glass of kefir.

  • half a glass of milk, kefir and the same amount of sugar;
  • two eggs;
  • three tablespoons of butter;
  • a pinch of salt;
  • flour 700 grams.
  • walnuts - 200 grams;
  • one glass of raisins and the same amount of sugar;
  • butter - 50 grams;
  • 50 ml milk;
  • one egg;
  • two spoons of cocoa and cinnamon;
  • vanillin.

This nut roll is easy to prepare. The recipe is very interesting, and the baked goods themselves are delicious. First you need to put the dough. To do this, yeast and sugar are diluted in warm kefir. The mass is left for twenty minutes. Next, milk and kefir are heated and butter and sugar are added. Mix well until smooth. Sift flour - 300 grams. Salt, milk-kefir mixture, dough and eggs are added to it. Mix gradually, add the remaining flour. After the dough stops sticking, you need to lay it out for kneading. Then put it in a cup, cover and leave for two hours.

Next, the nut filling is made. In a cup you need to put chopped nuts, raisins, cocoa, sugar and cinnamon. Mix by adding heated milk with butter, egg and vanillin. When the dough is ready, you should divide it into two parts, and each of them into three pieces, roll them out thinly, put in the filling and roll them into a roll. Then place in a baking dish, sprinkle with oil, cover with a towel and leave for one hour. Then brush with egg and then bake for another hour.

Roll with condensed milk and nuts

  • a glass of sugar;
  • a glass of flour;
  • eggs - 4 pieces.
  • - 5 spoons;
  • walnuts - half a glass;
  • powdered sugar - 200 grams.

Preparation:

First, take the eggs and separate the yolks from the whites. Beat the first ones with sugar, and the second ones make a fluffy foam. Then we combine both masses. Then flour is gradually added. The liquid dough is poured onto a prepared baking sheet covered with special paper. Distribute everything evenly and bake until golden brown. When it has cooled, remove the paper, soak it in condensed milk, sprinkle with nuts, and wrap it. Then sprinkle powdered sugar on top. The nut roll is ready. You can serve it on the table.

Roll with nuts and lemon cream

  • eggs - 4 pieces;
  • one yolk;
  • hot water - 4 tablespoons;
  • vanilla sugar - one sachet;
  • sugar - 125 grams;
  • starch - 25 grams;
  • flour - 100 grams;
  • baking powder - one teaspoon.
  • gelatin - 10 grams;
  • cream - 400 grams;
  • lemon juice - 100 milligrams;
  • lemon zest;
  • vanilla sugar;
  • half a glass of walnuts.

Preparation:

Use a mixer to beat the eggs, gradually adding hot water. Then add regular and When the mass increases in volume, you can add flour, baking powder, starch. Mix the mixture well and place on a baking sheet covered with special paper. Bake for fifteen minutes at 180 degrees.

While the dough is baking, you need to spread a towel on the table. Sprinkle it with sugar, take out the dough and place it on a towel, with which we wrap the roll.

Next the cream is prepared. To do this, soak the gelatin according to the instructions. Heat the lemon juice and add the gelatin. Then whip the cream with powder, cooled lemon juice and zest. The dough needs to be unrolled, greased with cream, sprinkled with chopped nuts, and rolled again. Then you need to cool it, and the nut roll is ready.

Very easy to prepare roll and very tasty! The only thing you have to spend money on is walnuts, but the amount of filling can be halved. This is a great dessert to go with a cup of tea and a cup of coffee. But in my opinion, it’s best to eat it with warm milk :)

I got 3 rolls of a decent size. But you can roll out the dough thicker, make the rolls shorter, etc. Everything is at your discretion. It’s better to make the filling first and then work on the dough.

I prepared the dough according to my favorite recipe, please ask for a step-by-step recipe and explanations. I’ll leave the recipe here too, but it will be brief.

For the test:

  • 1 tbsp. dry instant yeast
  • 2 tbsp. Sahara
  • 3 tbsp. flour
  • 300 ml warm water or milk
  • 1 tsp salt
  • 1/3 cup vegetable oil
  • 2-2.5 cups flour

For the filling:

  • 150 ml milk
  • 500 g shelled walnuts
  • 200 g sugar
  • 80 ml honey
  • zest of half a lemon
  • 1 tsp vanilla sugar or 1/2 tsp. vanilla extract

For lubrication: 1 egg

In a bowl, mix water (or milk), sugar and flour. Dissolve yeast in this mixture. Cover with a clean towel and leave in a warm place for 15 minutes. Add salt and oil. Add flour in parts and knead the dough so that it does not stick to your hands. Leave for another 15 minutes, the dough should increase 1.5-2 times.

For the filling, heat the milk with sugar and honey over low heat. You should not bring it to a boil, you just need the sugar and honey to dissolve.

Chop the nuts. You can use a blender, meat grinder or knife. Without fanaticism, nuts should not turn into flour.

Pour the hot milk mixture into the nuts. Stir well to obtain a homogeneous mass. Cool slightly.

Divide the dough into 3-4 parts (also mentally divide the filling). Roll each into a rectangular layer (if possible) 0.5 cm thick. Place the filling on the dough, smooth it out, not reaching a couple of centimeters to the edges. Fold the short edges over the filling (these will be the ends of the roll)

Roll the roll along the long side.

Place the rolls on a baking sheet, greased or lined with parchment paper, seam side down. Cover them with a towel and leave for 15-20 minutes in a warm place to rise a little. Then prick them lengthwise with a toothpick or a wooden splinter so that they do not crack during baking. Beat the egg in a cup or bowl and brush the rolls with it.

Place the rolls in the oven preheated to 200 degrees for about 20 minutes. They should turn brown, as in the photo. If this happens before the specified time, feel free to take them out so as not to burn. Do the same if the time is up and the rolls have not yet become golden and ruddy, i.e. wait until they acquire a pleasant color.

Remove the finished rolls from the oven, cover with a towel and let cool. And then you can cut and serve.
