Let's make a cake for March 8 with our own hands? And such a lively, homemade, cozy cake! Without impossibly sweet and unappetizing mastic, and without creamy roses made from vegetable cream in palm oil... Since March 8 always falls during Great Lent, I propose a fast version of the eight. However, if you have the desire to bake a rich pie, nothing could be easier! You can take only the design idea, or choose one of the quick options for yeast dough:

In order to bake two small eights (each is conditionally 4 servings), divide the amount of ingredients in all these recipes in half, since in each of them I kneaded for 1 kg (plus or minus) of flour. Here I used 500 grams.

As a filling, I took blackcurrant jam. But any other option is also possible, both rich and lean. I will focus on the latter.

5 ideas for lean sweet toppings:

1. Apple.
Ingredients: 250-300 g apples; 2 tbsp sugar (can be increased); 1 tsp cinnamon (you can do without it).
Preparation: Wash the apples, remove the skin, remove the core with seeds. Cut apples into cubes or small slices. Put on the dough, sprinkle with sugar and cinnamon.

2. Berry.
Ingredients: 250 g of any berries (fresh or frozen); 2-4 tablespoons Sahara; 2 tbsp starch (if the berries are frozen).
Preparation: Defrost the berries, drain the juice. Put the berries on the dough, sprinkle with sugar. If the berries are frozen, then sprinkle with starch first so that it absorbs the berry juice that will stand out during baking.

3. Pumpkin.
Ingredients: 200-250 g pumpkin (weight without peel and seeds); 2 tbsp sugar (can be increased or vice versa removed); 4 tbsp raisins.
Preparation: grate the pumpkin on a medium grater, mix with sugar and washed raisins. If the raisins are dry/hard, steam them first.

4. Chocolate.
Ingredients: 200 g lean dark chocolate.
Preparation: Break the chocolate into pieces or smaller pieces. Spread the chocolate pieces over the entire surface of the dough.

5. Stuffing "Friendship" from dried fruits.
Ingredients: 70-100 g prunes; 70-100 g dried apricots; 70-100 g of raisins.
Preparation: Rinse dried fruits thoroughly. Pour boiling water for 15 minutes if they are not very dry. Otherwise, hold under the lid, pour boiling water for about an hour. You can steam (soften for a couple).

You can make figure eights with unsweetened vegetable or mushroom filling - decide what you want more! Well, now I will tell you in detail about how I cooked this pie with jam 😉

For test:

  • boiled warm water - 230 ml
  • dry yeast - 5-6 g (you can replace 25 g of live)
  • salt - 0.5 tsp
  • sunflower oil - 3 tbsp.
  • premium wheat flour - 500 g
  • sugar - to taste (I did not add)

For filling:

  • blackcurrant jam - 200-250 g

Progress:

She sifted the flour and added dry yeast and salt to it. Mixed thoroughly.

If you want to knead a sweet dough, add sugar to the rest of the dry ingredients at the same stage.
If you use live yeast, then change the sequence - first dilute them in water, and then add flour, salt and sunflower oil.

She poured warm water.

She kneaded the dough.

I poured 2 tablespoons of sunflower oil.

She kneaded a ball of dough, greased it with the remaining spoonful of butter.
If the dough turns out sticky to your hands or, on the contrary, excessively dry, adjust by adding a little flour in the first case, and water in the second.

Put the dough in a warm place to rise (for 1-1.5 hours).
If you have time, you can lower it and wait for the dough to rise again.

She divided the dough into 2 parts.

I rolled each of them into a long and rather narrow layer. I got it in the size of 50x13 cm.

Spread the filling along the entire length in the center.

I made a tight pinch along the entire length of the "sausage".

I connected the ends together and folded into a figure eight, making the top a little smaller than the bottom. Transferred to a baking sheet greased with oil.

Bake each eight at 180"C for about 25 minutes.

  6. Evenly place the fried bacon with onions in the resulting form and pour everything with the resulting mixture of eggs, sour cream, milk. Fill the "sides" inside the form.
  7. Preheat the oven to 160 degrees and bake the cake in convection mode for 45 minutes.

French apple pie

For test:

  • Egg - 1 pc.
  • Flour - 120 g
  • Butter - 50 g
  • Sugar - 50 g

For filling:

  • Apples (or plums, pears, peaches) - 400 g
  • Ground almonds - 100 g
  • Egg - 2 pcs.
  • Butter - 100 g
  • Sugar - 100 g
  • Flour - 80 g

  1. For the dough, grind sugar with butter, add the egg and beat. Add flour and knead the dough. Label it in a plastic bag and refrigerate for 15-20 minutes.
  2. For the filling, beat eggs with sugar and butter, add ground almonds, flour and knead until smooth.
  3. Fruit cut into cubes.
  4. Roll out the dough on a sheet of baking paper 3 mm thick and place in a baking dish. Bake at 180 degrees for 15 minutes.
  5. Remove the cake from the oven and cool completely on a wire rack.

Pie with apples

Ingredients:

  • Flour - 350-380 grams
  • Baking powder - 2 teaspoons
  • Sour cream 25-30% - 125 grams
  • Butter 82% - 150 grams

For filling:

  • Egg - 1 large or 2 small
  • Sour cream with a fat content of 25-30% - 350-400 grams
  • Sugar - 200-250 grams
  • Flour - 3 tablespoons
  • Apples - 5 pieces

We take the flour, sift through a sieve, add 2 teaspoons of baking powder and mix everything thoroughly. Instead of baking powder, you can take 0.5 teaspoon of slaked soda, but add it not to flour, but to sour cream.

Butter (350 grams) at room temperature is rubbed with flour. The remaining 30 grams, we will add if necessary, in small parts at the very end of the batch. Again, if the dough turns out to be watery.

Add half a glass of sour cream to the crumbs, knead the dough. It should resemble melted plasticine, should more or less roll out. You should not mess around for a very long time, as the butter will melt and the dough will become softer. We put it in the refrigerator.

It is worth noting that there is no sugar in the dough and should not be. Do not worry about this, the filling will add sweetness to the cake.

Filling: Whisk all of the above ingredients until smooth in a blender or with a mixer. If neither is available, you can use a whisk or fork.

I must say that sour cream should be oily. Ideally, if you find 30%. However, if you have only 15% sour cream, the problem can be solved by adding 4 tablespoons of flour instead of 3.

Apples (approx. 1 kg.) Wash, cut in half and cut into small slices.
Take the dough out of the refrigerator and roll it out. Roll out preferably without flour. The thickness of the dough should be 5-7mm. We transfer it to the form (23-26 cm in diameter), rolling it onto a rolling pin. First we form the bottom, and then the sides of the cake.

Pierce the dough with a fork and sprinkle with sugar and cinnamon if desired. Fill with filling and lay out apple slices. We place the cake in an oven preheated to 180 degrees for 40-60 minutes, depending on the possibility of the oven. After we take the cake out of the oven, leave it alone for 2-3, letting the filling finally grab.

Curd pie with plums

Ingredients:

  • Sugar - 1 cup
  • Butter - 100 grams
  • Chicken egg - 2 pieces
  • Soft cottage cheese - 250 grams
  • Red plums - 200 gr.
  • Flour - 1.5 cups
  • Baking powder - 10 grams

Beat soft butter with sugar, then add baking powder and flour. The dough should be crumbly, like crumbs. For the filling, beat with a mixer 0.5 cups of sugar and 2 eggs, and then add the cottage cheese to this mixture. Whisk everything until smooth and fluffy. If your cottage cheese is quite grainy, then it is best to beat it separately with a blender until it becomes a paste.

Pour half of the dough into a mold (diameter 20-25cm), and evenly distribute our curd paste on top. Then we take the berries and beautifully lay them out slightly pressing into the cottage cheese. Instead of plums, you can take other berries and fruits, to your taste. For example, apricot, apples, pears, etc. Top everything with the remaining dough.

We place in the oven, preheated to 180 degrees for 25 - 40 minutes (depending on the possibility of the oven), until the cake is golden. Cooked cake can be sprinkled with nuts, for example, almonds, to your taste.

Pie "Zebra"

Ingredients:

  • Sugar - 300 grams
  • Flour - 250 grams
  • Egg - 4 pieces
  • Sour cream - 200 ml.
  • Butter - 100 ml.
  • Cocoa powder - 2 tablespoons
  • Soda - 1 teaspoon

Separately mix flour and soda. Beat the eggs and sugar separately from the flour mixture for at least 5 minutes at maximum mixer speed. Add sour cream and butter at room temperature. We mix everything at low speed. Add flour and soda and again mix with a mixer at low speed.

Now the resulting dough must be divided into 2 equal parts. Add cocoa powder to one part and mix with a mixer at low speed until smooth. We cover the form (20-25 cm) with parchment and grease it with oil. We lay out in turn 2 tsp. white dough and 2 tsp. chocolate, one layer in the center of the other. Make a drawing on the surface with a skewer, if you wish.
We place the cake in an oven preheated to 180 degrees and bake for 40 to 60 minutes, depending on the capabilities of the oven. Readiness is checked with a wooden skewer. You need to pierce the cake and if the skewer is clean - the cake is ready.

Curd pie with apricots

Ingredients:

  • Flour - 200 grams
  • Butter - 100 grams
  • Sugar - 50 grams
  • Egg - 1 piece
  • Baking powder - 1 teaspoon

For filling:

  • Cottage cheese - 400 grams
  • Egg - 2 pieces
  • Sugar - 120 grams
  • Sour cream - 200 grams
  • Starch - 2 tablespoons
  • Juice of half a lemon
  • Vanilla sugar - 10 grams
  • Apricots - 10-12 pieces

Rub soft butter with sugar. Add the egg and mix everything. Sift the flour through a sieve with the baking powder and add it in parts to the rest of the ingredients, mixing well each time. You need to make a ball out of the dough and place it in the refrigerator for half an hour. Then we shift the dough into a mold (20-25cm) and form high sides.

Beat until smooth cottage cheese, sour cream, sugar, vanilla sugar, eggs, starch and juice of half a lemon and pour the resulting curd mass into the dough. Arrange the apricot halves on top. If the apricots are fresh, then you must first sprinkle with sugar so that they are not sour.
We send the cake to the oven preheated to 180 degrees and bake for 40 to 60 minutes, depending on the capabilities of the oven.

Pie "Strawberry"

Ingredients:

  • Flour - 200 grams
  • Kefir - 100 grams
  • Sugar - 200 grams
  • Egg - 1 piece
  • Baking powder - 1 teaspoon
  • Butter - 6 tablespoons
  • Vanilla extract - 1 teaspoon
  • Strawberries - 100 grams

First, mix flour with sugar and baking powder. Add soft butter to our flour mixture and knead everything with your hands. Then, add the chicken egg, kefir and vanilla extract to the dough. Mix everything until smooth, and then put everything in a baking dish.
We lay out the strawberries beautifully on top and send them to bake in an oven preheated to 180 degrees for 15-30 minutes (depending on the capabilities of the oven) until golden brown.
If desired, the finished cake can be decorated with powdered sugar.
