Option 1: Classic recipe for turkey in cream sauce in the oven

Turkey meat is quite tender, and as if it itself asks to be cooked, framed by a delicate creamy sauce. There are many options for such gravies, and they can be either purely creamy or include tomatoes. The choice of cream should be based on the parameters of its thickness and fat content. If the recipe does not strictly stipulate, then try to choose the most high-calorie, but at the same time thin product. If you liked the dish, but would like a richer sauce, you can experiment with frozen homemade cream.

Ingredients:

  • fresh turkey meat - up to a kilogram;
  • two medium-sized tomatoes, always fully ripe;
  • half a glass of cream;
  • head of garlic;
  • a mixture of aromatic peppers;
  • highly purified oil.

Step by step recipe

Cut the poultry flesh without skin, but with bones, into large pieces, two per serving. Peel and crush the garlic or simply chop finely with a heavy knife. Mix garlic with spices and salt, rub the meat with it.

Place the turkey in a baking dish and chop the tomatoes into small pieces. Pour oil, stir without crushing the tomato slices. Pour in the cream and mix with your hand again. Seal the container tightly with several layers of foil.

The temperature in the oven should be 185-190 degrees; keep the bird in this mode for half an hour. Remove the container, quickly remove the foil and pour the juice from the bottom of the container over the meat slices. Return the dish to the oven for another thirty minutes. If the turkey pieces come out large when cutting, or if you want a browner surface, increase the time or temperature of the second baking stage.

Option 2: Quick recipe for tender turkey in creamy sauce in the oven

Poultry breast meat and fillets from other parts of the turkey are also suitable for this dish. Changes to the recipe, originally designed specifically for breast, are simple - marinate for a quarter of an hour longer, fry more strongly and add a little time for stewing.

Ingredients:

  • turkey fillet, weighing half a kilogram;
  • a pinch of pepper or a mixture of hot and black and the same amount of ground nutmeg;
  • three pinches of curry;
  • half a spoon of mustard sauce and a full spoon of fine salt;
  • liquid, approximately 20 percent, cream - a glass;
  • two tablespoons of starch and one - sunflower oil, highly purified;
  • a quarter cup of chopped greens.

How to quickly cook juicy turkey in creamy sauce in the oven

Rinse the meat selected for cooking and pat dry with a towel. Cut into bars no larger than half a matchbox. Sprinkle with salt and spices and mix thoroughly. If desired, you can add washed basil leaves by lightly rubbing them with your palms, but this component must be carefully removed after marinating.

Soak the fillet in the marinade for about twenty minutes, at room temperature. Heat the oil in a frying pan, sprinkle the meat directly in the bowl with starch and shake thoroughly, stirring. Immediately place in the pan and fry, turning when browning, for about ten minutes.

When the turkey slices are sufficiently browned, pour in the cream and add mustard. Cover with a lid and place in a preheated oven. If you have a suitable small casserole dish on your farm, it is better to cook the dish in it from the very beginning. The oven temperature is about 200 degrees, the time is up to forty minutes. Next, take out the frying pan and place it on the burner that is on, without covering it with a lid - evaporate the excess gravy at moderate heat.

Sprinkle with herbs and serve with quality pasta or rice.

Option 3: Turkey in cream sauce in the oven with potatoes

We prepare a dish from drumsticks or thighs, the amount of products is freely calculated based on the mass of meat. It is worth cutting them together with the seeds, for greater richness of the resulting sauce. However, no one forbids removing the bones, or even using the meat from the turkey breast.

Ingredients:

  • three large turkey drumsticks;
  • six large potatoes;
  • four tomatoes and six large champignons;
  • a spoonful of refined oil;

Into the sauce:

  • a glass of low-fat cream;
  • five tablespoons of flour;
  • a quarter of a bunch of dill and onion feathers;
  • garlic;
  • five tablespoons of flour and one of butter;
  • a spoonful of salt, three pinches of pepper and seasoning for roasting poultry.

How to cook

We prepare the turkey, cut it into pieces, about fifty grams in weight. We cut the tomatoes into four parts, and the peeled potatoes into eight. We cut the champignons at our discretion; you should not do this too finely. Mix the listed ingredients, add salt, sprinkle with all the spices, and mix.

Place the food in an oiled roasting pan, cover with a cloth and leave for a while.

Quickly prepare the sauce: chop the herbs and peeled garlic. Place in a high frying pan and pour in cream. We begin to heat it slowly and add the butter; when it has partially melted, sprinkle with sifted flour and stir to avoid clumping. Sprinkle with poultry seasonings and leave the heat for another minute.

Pour the cooled cream sauce over the food on the baking sheet, place it in the bottom of the oven, heating at about 190 degrees. After thirty minutes, lower the temperature by fifty degrees, and “wrap” the fryer tightly with foil. We cook for another hour. More precisely, the end of the first stage of cooking can be determined by the crust that has formed on the food, after it becomes sufficiently browned and you need to cover the baking sheet with foil.

Option 4: Turkey in cream sauce in the oven with mushrooms

IN original recipe, the whole breast is used, the meat is cut ready, just before serving. But, since turkey itself is not as common a bird as, say, chicken, and even more so its breast is a sought-after product and therefore rare, we adapted the dish for preparation from any parts of the bird.

Ingredients:

  • a kilogram of boneless turkey meat;
  • half a kilo of mushrooms;
  • half a glass of cream;
  • two tablespoons of sweet cream butter and one of lemon juice;
  • large onion;
  • bay leaves - 2 pieces;
  • ground paprika and black pepper into powder.

Step by step recipe

Chop the meat finely, cut the onion into quarters. Place in a frying pan in melted butter, add bay leaves and pepper, add salt and fry until golden brown.

Pour a glass of water into the fried foods, let it boil and move the covered frying pan into a very hot oven. Simmer for exactly one hour at 200 degrees.

Prepare the mushrooms according to the variety used, cut them quite large so that they look good in ready dish. Place them with the rest of the products, set aside for another hour, and do not cover with a lid this time.

Carefully remove the meat from the sauce and place on a flat plate. Pour the cream into the pan and let it quickly boil on the stove. Add salt, add paprika, pour in lemon juice and warm it up just a little. Pour the sauce over the turkey in the plates, along with the side dish.

Option 5: Turkey in cream sauce in the oven with mustard

Not indicated in the title, but one of important components, affecting both the taste and appearance of this dish, is cheese. In principle, any variety will do, but give preference to the native, “Russian” variety; the only important thing is that it is natural and fresh. The combination of the taste of cheese and cream, and a slight mustard tint - this is the calling card delicious dish from turkey.

Ingredients:

  • half a kilo turkey fillet (breast);
  • a tablespoon of mustard sauce and a teaspoon of paprika;
  • salt and a pinch of pepper mixture.

Into the sauce:

  • a glass of medium-fat cream;
  • a spoonful of prepared mustard;
  • two hundred grams of cheese.

How to cook

Wash the fillet and pat dry with a dry cloth. Cut into slices, two for each serving. Mix mustard, paprika and salt and thoroughly rub the meat with this mixture. Leave the turkey to marinate for an hour, cover with a lid, but don’t put it in the cold - it will be faster.

Fry both sides of the meat slices in hot oil. The blush should be bright and uniform; there is a reason to lightly press the meat into the pan with a spatula. Place the finished meat in one layer in a baking dish.

Grate the cheese into medium shavings, set aside about a third, and mix the rest with cream, pepper, mustard, and salt. Pour this mixture into the meat in the mold and place it in the oven for twenty minutes. Heating should be between 190 and 205 degrees.

The turkey is almost ready, but the dish needs to be decorated a little more: sprinkle it with the rest of the grated cheese and put it in the oven to melt for another three minutes.

Turkey fillet and cream are a very harmonious combination... The meat can be taken from the breast or thighs of the turkey. You can serve anything as a side dish for this dish, for example: cereals, pasta or potatoes. Cream is suitable for almost any fat content, but cheese is suitable: hard or semi-hard. Provencal herbs and allspice varieties are good as spices.

Prepare the basic ingredients of the dish (see photo).

Cut the turkey fillet (here from the thighs) into pieces, add a little salt, and sprinkle generously with spices.

Add starch (corn starch here) and stir. Leave for 15-20 minutes.

Then fry the turkey pieces on all sides in a frying pan with olive oil over high heat.

Pour the cream into the fried pieces and after boiling, stir, reduce the heat to medium or low. Simmer covered.

While the turkey is braising in the creamy sauce, prepare the side dish. Thin spaghetti cooks the fastest, i.e. capellini - 3 minutes or couscous - 5 minutes, for my taste these are the most suitable side dishes instant cooking for this dish.

At the end of cooking, add grated cheese and fresh aromatic herbs to the turkey in a creamy sauce. I added some dwarf basil leaves that grow on my windowsill.

Bon appetit!
