Fried pig ears with beer

Ingredients:

My husband just loves this appetizer, Korean-style pig ears! Koreans sell it here in our building, but they charge so much for 100 g that it’s easier to learn how to cook such a dish yourself - it turns out to be 10-15 times cheaper and much tastier! Another plus homemade pig ears is that you know under what conditions your appetizer was prepared. The taste of the prepared dish is practically no different from the purchased one - I compared it!

Instead of dried garlic, you can use fresh garlic instead. lemon juice- apple, balsamic or wine vinegar, 9% vinegar. Also choose oil according to your taste, but be sure to be odorless so that it does not interrupt the aroma of the dish itself.

The only negative is the length of time it takes to cook the ears themselves, but believe me, it’s worth it!

So, get some fresh pig ears and let's get cooking!

Rinse your ears in water and carefully scrape off all the dirt from them with a knife, cleaning it even from hard to reach places. Rinse the product again in water and place in a cauldron or thick-bottomed pan. Fill in hot water and add 1 tbsp. salt. Boil the ears for 1.5-2 hours, adding water from time to time.

Remove the ears from the broth and let them cool. This must be done, because if you start cutting hot ears, the cutting itself will stick together - it’s the hot skin that sticks together, and then tearing it into pieces will be problematic!

Cut the cold ears into strips so that literally each of them contains white cartilage.

Place the slices in a salad bowl, add all the prepared seasonings, lemon juice and soy sauce. Do not add vegetable oil yet - just before serving! Mix all the contents of the saucepan and cover with a lid, place in the cold for about 1.5-2 hours so that the ears can marinate.

As soon as indicated time will pass- season the Korean pork ears with vegetable oil, mix gently and serve, garnishing with finely chopped herbs: dill, parsley, green onions.

In Korean - a delicious spicy snack. It goes well with a variety of strong drinks. It's easy to prepare. The most important thing is to rinse the pig ears well (in Korean, they must first be boiled and then marinated). You can prepare many interesting and appetizing dishes from them. First of all - salads.

Pig ears in Korean

In order to prepare four servings of salad, you will need one pair of large pig ears, black peppercorns and salt. For the marinade you need garlic, Korean seasoning for carrots, olive oil, sugar and wine vinegar. All these ingredients need to be taken one tablespoon at a time. Boil a liter of salted water and cook Korean-style pork ears in it with the addition of bay leaves and pepper for two hours over moderate heat. If they come from an old animal, additional time may be required. For example, up to three hours. If the water boils away, you need to add more salted boiling water.

Meanwhile, prepare the marinating sauce.

This should be done as follows: crush the bay leaf, crush the garlic cloves with a press and combine them with the rest of the marinade components. Cut the boiled chilled ears into thin long strips and season with sauce. Then place in an airtight container, cover tightly and put in the refrigerator for a day. Ready dish very crispy, elastic and aromatic. The light garlic flavor stimulates the appetite and allows you to use it as a snack. You can eat them with mashed potatoes or peas, with steamed rice. It can also be used as a component of salads. Top marinated or smoked pig ears with an egg, green peas, gherkins or chopped potatoes, boiled in their jackets. This good opportunity diversify your menu. Almost any salad will benefit from this component. Crispness will help add a piquant touch to many dishes. This offal can be added to julienne and noodle casseroles (instead of bacon).

Original soup

But you shouldn’t think that only the pig’s ears themselves can be useful to you - the benefits of the broth that results from boiling them are not so obvious, but very great. It is very thick and rich. You can even make jellied meat from it, but you still start with soup. In addition to half a kilogram of pig ears, you will need some bacon, a glass of beans, four paprikas, three hundred grams of potatoes and the same amount onions, one carrot, parsley, dill and marjoram. And also a tablespoon of flour for dressing and spices to your taste.

Boil the pig ears as above, but with onions and carrots. Boil the beans separately. Peel and cut the paprika and potatoes. Strain the broth, cut the finished pork ears into strips. Prepare a dressing from bacon and onions. Add flour and marjoram to it. Pour the broth into it, achieving homogeneity. Then add potatoes, meat, beans and peppers to the soup and cook until done. Five minutes before the end of cooking, add the herbs, pepper and salt.

Recipe with photos step by step:

Pig ears must be thoroughly rinsed under running water. Use a knife to scrape them out well. The greasy part, if there is one, you need to cut it off.
Then we put them on the fire, filling them completely with water.
Add salt, bay leaf, and cook, stirring from time to time. Stirring is necessary so that the pork ears do not stick to the bottom and do not burn.

Pork ears need to be boiled until tender. To check whether they are ready or not, you need to pierce them with a fork. If the ears can be pierced well with a fork, you can take them out. But don't forget to taste them before you do. You will understand for yourself when you try whether the ears are ready or not, but they should crunch a little, this is their peculiarity. After you remove the ears from the pan, they need to be placed under the flow cold water. This needs to be done for about 15 minutes so that the pig ears do not stick and are not slippery.
Let us remind you that last time we prepared.
After the ears are thoroughly washed, you need to let the water drain from them. To do this, place them in a colander. When the water has drained, you need to wait until the ears dry a little.

Now the main thing is to cut the pork ears correctly. For this appetizer you need to cut them into very thin strips. It is best to cut the ear in half, and then cut these halves as wide as possible.

After all the pork ears have been cut using the above method, they need to be placed in a deep bowl.
Now we fill the ears with spices. Add everything to taste.
Take the garlic and chop it finely. You can grate it or chop it in a garlic press.
Add soy sauce.

Now mix everything thoroughly with your hands so that the spices are better distributed throughout the pig ears.

As you can see, the recipe for preparing pork ears in Korean is not complicated, but it turns out very tasty!
The ears can be eaten immediately, but you can leave them to marinate for a couple of hours, then they will become even tastier.

Bon appetit!
Well, for now we will tell you,
