Brushwood cookies recipe. How to make brushwood? Recipe for making brushwood. Classic recipe for homemade brushwood made from milk dough

How to cook brushwood at home so that it turns out crispy, golden brown and very tasty? The answer to this question will be presented to your attention below. It is especially worth noting that this dessert is made quite quickly and easily. But in order for it to really turn out beautiful and please your children, you should show creative imagination and put a lot of effort into frying the products.

How to cook brushwood at home: a detailed recipe

Required ingredients for dessert:

  • 20% fresh sour cream - 1 large spoon;
  • sifted wheat flour - 2-3;
  • small chicken eggs - 2 pcs.;
  • baking soda - a small pinch (no need to extinguish);
  • granulated sugar - 20 g;
  • 2% fresh milk - 2/3 cup;
  • fine iodized salt - 1/4 small spoon;
  • cognac or vodka - 2 spoons (you don’t have to add it);
  • powdered sugar - any quantity (for sprinkling the finished dessert);
  • Refined sunflower oil - 2.5 cups (for frying).

Preparing the base

Before making it at home, you should knead a very thick dough well. To do this, you need to combine 20% fresh sour cream with granulated sugar, milk and chicken eggs. These ingredients must be mixed until all products are dissolved, forming a homogeneous mass. After this, add a small pinch to the mixture baking soda and wheat flour. You only need to add vodka or cognac to the dessert base if you like a more original taste of the sweet product.

To understand how to cook brushwood at home, you should know that such a flour dish requires thorough mixing of the base. It is advisable to knead it for a quarter of an hour. During this time, the dough will become homogeneous, elastic and tough.

Formation process

It is necessary to cut off 1/4 of the finished base, and then roll it into a layer up to 3-4 millimeters thick. Next, the sheet needs to be cut into rectangles (with sides of 2 and 7 centimeters), each of which should be beautifully decorated. To do this, you need to make a cut in the middle of a piece of prepared dough, and then insert one of the ends into it several times. As a result, you should get a kind of curl.

Like deep frying

After all the semi-finished sweet products are ready, you should put a deep dish (for example, a duck pot) on high heat, pour 1 glass of sunflower oil into it and heat it up very high. Next, you need to carefully place several pieces into the boiling fat and immediately mix them using a slotted spoon. When the brushwood is browned on all sides, it must be discarded in a colander, allowed to drain off the fat and transferred to a deep plate. By analogy, all remaining semi-finished products are fried.

How to serve

Now you know how to properly prepare brushwood. After frying the entire amount, place it in a heap on a plate and sprinkle powdered sugar on top. The finished dessert should be presented to guests along with sweet hot tea.

One of my favorite delicacies as a child was brushwood. Classic recipe involves a batter that is baked in boiling oil in a special pan. My mother rarely baked these crispy flowers, but my brother and I simply adored them! And although such brushwood is prepared with vodka, after heat treatment There is no trace of alcohol left in the cookies.

So, here is a classic recipe - liquid brushwood with vodka.

Ingredients:

  • flour - 1 glass;
  • egg – 1 pc. (if you use quail, then 2 pcs.);
  • sugar - 1 tbsp. spoon;
  • chilled boiled water - 1 glass;
  • a pinch of soda and salt;
  • vanillin (to taste);
  • vodka - 2 tbsp. spoons.

For frying – 0.5 liters of vegetable deodorized oil.

Preparation:

  • Mix flour with egg, sugar, salt, soda, vodka.
  • Add water little by little, stirring constantly, until the dough becomes like liquid sour cream.
  • Pour into a deep bowl vegetable oil and bring to a boil. Transfer to low heat and maintain small bubbles rising from the bottom.
  • Place the mold in boiling oil and heat thoroughly. If the oil is at the right temperature, bubbling will immediately begin around the cold mold. We warm it up properly - the dough will not come out of the pan that is not hot enough; it will have to be “scraped” with a fork.
  • We lower the hot form into the batter dough for a few seconds so that it just barely reaches the edge so that it does not overflow.
  • Place the dough-lined mold back into the container with oil.
  • When the dough slides off the pan, let it fry until golden yellow. You won't have to wait long, everything happens very quickly.
  • We take out the finished curly brushwood and lay it out so that excess oil can drain off. You can lay it out, for example, on a paper towel.
  • Traditionally, classic brushwood is sprinkled with powdered sugar while it is still hot - this makes it both tasty and beautiful.

All that remains is to place the sweetness on a beautiful dish, and you can serve it to the table. The cookies turn out very appetizing, once you start eating it it’s hard to stop. But remember that you shouldn’t get too carried away: deep-fried foods are difficult for the liver to perceive. So eat it with pleasure, but in moderation.

For those who like to see everything carefully and in detail, I offer a video. Here liquid brushwood is also prepared by adding milk to the dough:

Bon appetit!

“Khvorost” is a surprisingly tasty cookie, tender, crispy, literally melting in your mouth. It is perfect for both festive and everyday tables and goes well with tea, coffee and other drinks. And to prepare it, there are several varieties original recipes. Perhaps the only disadvantage of the dessert is that the dough absorbs too much fat while it is fried. To avoid this, use a deep fryer.

Common brushwood: preparing the dough

First, as usual, let's start with the classics. Prepare the dough to make traditional brushwood cookies. The recipe includes the following ingredients: flour - 3 cups (without a slide), eggs - also 3 pieces, sugar - half a cup or a glass (optional), alcohol (vodka, cognac, brandy) - 30-40 g, water - 1 cup, salt - half a spoon (teaspoon), powdered sugar for sprinkling and fat for frying. to get the classic brushwood cookies? The recipe is as follows: sift the flour, beat in the eggs, add salt and sugar, pour in alcohol and water. The dough should be stiff, so add more flour if needed. Cut small pieces from the resulting workpiece and roll into thin layers. From them, cut strips 5-7 cm wide, which weave into a braid, figure eight, or give them another desired shape.

Common brushwood: subtleties of preparation

The brushwood cookies are almost ready! The recipe further draws your attention to the fact that this delicacy is not baked, but fried. To do this, pour vegetable oil or put lard into a thick-walled cast iron pot to melt. When the fat is very warm, add dough figures into it in small portions and wait until they brown. The recipe recommends removing the finished brushwood cookies with a slotted spoon or a fork, placing them on a sieve or wire rack covered with paper napkins or a towel to absorb excess oil. Then, when the figures have cooled, roll them in powdered sugar and serve them with tea on a flat dish.

Recipe with sour cream 1

You can fry the cookies a little differently and it’s not too complicated either. Quantity and composition of components: for 2 and a half cups of flour you need 3 egg yolks, 1 tablespoon each of sugar and sour cream, 2 tablespoons of cognac or other alcoholic drink, half a spoon of small salt (or to taste), half a glass of milk (fresh). Plus fat or oil for frying. How to knead the dough to make brushwood cookies? The recipe (photo attached) instructs to first combine all the ingredients except flour, and then add it in small portions, kneading thoroughly. The dough should be stiff, elastic, and smooth. Next, as in the previous recipe, it should be rolled out into thin layers, cut into strips 12 cm long, intertwined and the resulting “twigs” fried in hot fat. Place the finished cookies on paper or a wire rack and, when excess oil has drained, roll in powder.

Recipe with sour cream 2

As already mentioned, usually “brushwood” is not baked, but fried, such is the tradition. However, there is a very interesting recipe that violates it. It also includes sour cream. Sift 400 gr. flour, add a little soda or baking powder, 200 g of sugar, 150-160 g. butter or margarine (melted), 1 whole egg and 2 more yolks, 3 tablespoons of sour cream and make a smooth dough. Then roll out into layers half a centimeter thick and, as usual, cut into strips and make braids. Brush them with beaten egg white, place on an oiled baking sheet and bake until done in a well-heated oven. Sprinkle with powder or sugar.

Along the way, it should be noted that the “brushwood” can be sprinkled not only with ordinary powdered sugar. Do this: mix it with vanilla powder and cinnamon. The resulting mixture will be very aromatic, and your cookies will have a stunning, delicious smell. Instead of powder, you can take regular sugar, crush it a little and mix with the indicated ingredients, adding cardamom and grated. It will turn out great too, you can be sure!

Cookies in molds

Brushwood cookies are not always available with alcohol. The recipe offered to you without vodka will not be inferior in taste to previous delicacies, and its preparation does not require a drop of alcohol. Take premium flour (required) - 2 cups, 5 tablespoons of sugar (tablespoons), a little salt and 5-6 eggs. Knead the batter, thoroughly rubbing all lumps. Naturally, you cannot roll it out and cut it into strips, so you will need special “brushwood”. At first, handling it requires some skill. Then things will go briskly. Only all manipulations should be performed, albeit carefully, but at a pace. So, heat the fat in a cast iron. Dip the mold into it so that it heats up, then lower it into the dough and immediately back into the cast iron. The brushwood cooks quickly and loses its shape. Place the finished cookies on paper and continue frying. Then roll the “brushwood” in powder (sugar) and you can enjoy your dessert!

Firstly, for those who liked the recipe, but have problems with the presence of molds, we can advise you to do this. Pour the dough, for example, into a bottle with a narrow neck. And pour the workpieces from it in a thin stream directly into the hot fat, directing the stream in zigzags. The cookies are fried - take them out and continue the process. Secondly, what to fry the brushwood on. Traditionally, sunflower oil is used, always refined. Or the following combinations are used: animal lard and vegetable oil, baker’s margarine in equal proportions. It should be heated very well, not lower than 180 degrees. Of course, you won’t measure the temperature, but you can get your bearings. The surface of the fat will begin to smoke, and the fat itself will begin to evaporate. It is at this temperature that the pieces of dough do not sink in the oil, but remain on the surface and quickly brown. Then you need to send semi-finished products into them and take out the finished treat! Just be careful: hot fat will splatter a lot.

Good luck with your baking, crispy and rosy, and bon appetit!

Brushwood - crispy recipe homemade cookies. The peculiarity lies in the thin, brittle dough, deep-fried ( large quantities hot oil). Main ingredients - milk, eggs, flour, butter, sugar. The cookies received the name “brushwood” because of their external resemblance to fragile thin branches. The history of the origin of the dish begins in Greece. In the 15th century, the Greeks cooked thin strips of unleavened dough in hot fat. The result was a low-fat, crispy, golden cookie. At the beginning of the 20th century, the dessert spread throughout Europe. Italians cook ears in hot oil, Uzbeks cook zangaza, Tatars call brushwood “kosh tele.” The German recipe is the least canonical: the kreppels are not crunchy, they are more reminiscent of fluffy Ukrainian verguns. Brushwood is easy to prepare and very tasty, an ideal dessert for a cup of tea.

CLASSIC BRUSHWOOD

Ingredients: 5 egg yolks; 5 tsp. milk; 1-2 tbsp. l. strong alcohol (cognac, rum); premium wheat flour; salt; powdered sugar.

The yolks are mixed with milk, alcohol until smooth, and added with salt.

Gradually add flour and knead the stiff dough that lags behind your hands.

The dough is rolled out to a thickness of no more than 1 cm, cut into strips 3 cm wide and 8 cm long. The strip is turned inside out to form a “bow”.

Each cookie is placed in boiling oil and fried until golden brown.

The finished treat is sprinkled with powdered sugar.

Sugar is not added in the classic recipe (it interferes with the splendor of the dough). Powdered sugar or honey adds sweetness to baked goods. It is necessary to fry cookies in a large amount of oil, not in crowded conditions.

"AIR" BRUSHWOOD

Ingredients: 11 g dry instant yeast; 1 tbsp. flour; 1/4 tbsp. water; 1 egg; 1 tbsp. l. powdered sugar; 2 tsp. granulated sugar; salt.

Yeast dissolves in water at a temperature of 30-35 degrees. Add a little flour to a liquid consistency and leave in a warm place for 2 hours. The egg is ground with sugar and salt, the yeast mixture is added, the remaining flour is added, and a stiff dough is kneaded. Roll out 4 balls, each one rolled out into a layer 2 mm thick. The strips are cut and the liver is given the required shape. The products are dipped into boiling oil and fried until golden brown. Place the baked goods on a napkin and sprinkle with powdered sugar.

CHEESE BRUSH

Step by step recipe includes ingredients: 300 g low-fat cottage cheese; 3 tbsp. sunflower oil; 1 egg; 1 tbsp. wheat flour; 3 tbsp. l. sesame; 2 tbsp. l. Sahara; 1 tbsp. l. powdered sugar; salt.

Cottage cheese is mixed with egg, flour, sesame seeds, sugar, salt, and left warm for half an hour. The finished dough is rolled out into a layer 3 mm thick. The circles are cut into strips and brushwood is formed. The sweet is fried in a large amount of boiling oil until golden brown. Place on a napkin and sprinkle with powdered sugar.

BRUSHWOOD IN A MULTICOOKER

Large cast iron frying pans with high sides are a relic of the past. A multicooker is used to prepare a crispy dessert. Indisputable advantages: boiling oil does not splash around, does not smoke, the product does not burn, maintaining the classic taste. Compared to frying, less oil is used in a frying pan.

Are used following products: 500 g wheat flour; 100 ml milk 2.5% fat; 1.5 tbsp. l. vodka; 1 tbsp. l. sour cream; 3 eggs; 200 g sunflower oil; salt; powdered sugar.

Beat eggs, mix with powdered sugar (the amount of sugar depends on taste preferences). Vodka, milk, sour cream, and salt are added. The components are mixed into a homogeneous mass. The sifted flour is poured out and a tight dough is formed. The resulting dough is allowed to rise for 30 minutes. Thin flat cakes 2 mm thick are rolled out, strips, diamonds, and squares are cut (the shape is arbitrary). The multicooker is set to the “Frying” mode. Oil is poured into the bowl and heated. The cookies are carefully placed in a container and cooked under the lid until they reach their characteristic golden color. The sweets are laid out on a napkin and sprinkled with powder.

Properly toasted brushwood is a weightless, airy cookie. Prepared with powdered sugar, honey, jam. There are two types of dough: hard and liquid. Cookies are usually made from hard dough. Liquid is used in the presence of special baking dishes. Main secret successful dish - the thinly rolled out dough should be almost transparent, 1 mm thick. Various figures are cut out from the rolled out dough. A simple version of beautiful cookies: the layer is cut diagonally into oblong diamond shapes, and a cut is made in the middle. One tip of the diamond is threaded into the cut. The mold is ready, send it to bake.

It is important to choose the right oil for frying. Cookies are fried in anhydrous fats: melted, refined sunflower oil. The container is filled to half, the products are completely dipped, otherwise they will not turn out crispy. You should remove the remaining pieces of dough - the delicacy will not taste bitter. What makes brushwood aerial is alcohol - vodka, cognac, rum. Adds splendor to the dough egg white, sour cream, milk. Sugar is added to the dough carefully: too much sugar makes it unsightly. Brown color. Less liquid in the dough means the cookies will be crispier. A simple paper towel or napkin helps remove excess fat.

Be sure to add a pinch of salt to make the taste of the product more harmonious. At the end you need to add flour and mix. There should be no lumps in the consistency. It should look a little thicker than for pancakes. Let it rest for 15 minutes and then start frying.

3. To do this, pour 2 cm of vegetable oil into a deep fryer or deep frying pan of small diameter. Heat it up, but don't let it boil. Dip a metal flower or other carved shape you have into the oil for 1 minute. It should become hot, but not scorching hot. Then dip it 2/3 of the way into the batter for a second. It will stick to the hot metal in a thin layer. After this, the tool with the dough must be quickly dipped into oil.

4. After a minute, the workpiece can be easily removed from the metal mold. After this, you can leave it to finish frying, and in the meantime, dip the tool in the dough again and place it in oil.

Please note that this sweetness is usually made in the form of roses and is often coated with sugar rather than powdered.

Making Crimean pakhvala

A bonus for you is a special recipe for “beach baklava”, that is, Crimean brushwood. Everyone who was at sea, I think, definitely tried this delicious delicacy. Now let's prepare it ourselves at home.

Ingredients:

  • Flour - 3 tbsp;
  • Mineral water - 1 tbsp.;
  • Sugar - 1 tsp;
  • Vodka - 3 tbsp;
  • Sour cream - 1 tbsp;
  • Salt - 1 pinch;
  • Nuts - 0.5 tbsp;
  • Powdered sugar - 2 teaspoons.

For the syrup:

  • Water - 2/3 tbsp.;
  • Sugar - 1 tbsp.;
  • Honey - 1 teaspoon.

Cooking method:

  1. Take a bowl to knead the dough. Add flour, make a well in the middle and pour into it mineral water mixed with vodka, add sour cream. Add salt and sugar.
  2. Mix gently with a spoon, starting from the center and gradually adding flour from the edges of the bowl.
  3. Pour a little flour onto the table, spread it over the table with your hand and lay out the resulting mass.
  4. Knead the dough; the dough should be elastic and stiff. You may need more or less flour, look at the condition of the dough yourself.
  5. Cover it with a napkin. Let it lie and “distance” for 20-30 minutes. Or you can wrap it in film and put it in the refrigerator for 1 hour.
  6. Then knead thoroughly again until it becomes elastic and smooth.
  7. Divide the dough into 5 parts, roll into balls. Leave one, put the rest aside, cover with a napkin so that the mass does not dry out.
  8. Sprinkle the table with flour, spread it over the table with your hand, roll out a plate with a rolling pin about 1 mm thick, sprinkle a small amount of flour on top, spread it, brush off the excess with your hand.
  9. Roll the plate not very tightly into a roll 3-4 cm wide.
  10. Cut the roll at an angle of 45 degrees into pieces of 5 cm. If you cut it with a curly knife, which is used to cut pasties, the brushwood will turn out in the form of flowers. Lightly pinch the ends to give a pointed shape.
