Ingredients:

  • flour - 4 cups;
  • eggs - 2 pcs.;

Cooking

Sift flour into a large bowl, add salt, pour in kefir and beat in eggs. We mix first with a wooden spatula, and later, when the dough has already absorbed the liquid, we continue to knead it with our hands. If the dough has already turned out to be quite dense, and the flour is still left in the bowl, put the dough on the table and knead it for a couple more minutes. After that, cover it and leave it to rest for half an hour. After this time, divide the dough into 5 equal parts and roll each of them with a sausage. We cut them into pieces about 2 cm wide. We turn them into cakes and put the filling from each of them in the center. We connect the edges of the dough and pinch tightly. Dip the dumplings in boiling water and after they float, cook for another 5 minutes.

Dough for steamed dumplings on kefir

Ingredients:

  • - 1 glass;
  • salt - 1 teaspoon;
  • sugar - 2 tbsp. spoons;
  • vegetable oil - 3 tbsp. spoons;
  • flour - 2 cups;
  • soda - 1 teaspoon.

Cooking

Sift 2 cups flour into a large bowl. You can not do this, but with sifted flour, the dough turns out to be more tender. In the center we make a recess, pour kefir, vegetable oil into it, add sugar, salt. Knead the dough. And then the most interesting thing is to sprinkle the work surface with soda, put our dough on it and knead it well for about 10 minutes. Next, divide it into pieces, roll up sausages with a diameter of about 3 cm, and then cut them into pieces. We roll each of them to a thickness of 5 mm and proceed to the formation of dumplings with our favorite filling. Next, put them in a steamer basket, greased with oil, at some distance from each other and send them to a double boiler or a slow cooker.

Kefir dough for dumplings with cottage cheese

Ingredients:

  • kefir 2.5% fat - 1 cup;
  • eggs - 1 pc.;
  • flour - 2.5 cups;
  • sugar - 1 teaspoon;
  • salt - a pinch;
  • soda - 1/3 teaspoon.

Cooking

Pour kefir into a deep bowl, beat in an egg, add salt, sugar and soda. Stir well and let stand for 5 minutes so that the soda reacts with kefir. After that, gradually begin to add flour, while kneading the dough. It is not worth pouring it all at once, it is better to add it in parts until the dough completely begins to lag behind the hands. Depending on the type of flour, it may go a little more or less. After that, we already cover the dough and leave it right on the table for 15-20 minutes. Then we divide it into several parts. We begin to work with one of them, and let the rest lie under a napkin so that it does not get weathered. We roll out a tourniquet from the dough and cut it into pieces. With your hands, flatten each piece slightly, and then roll it out. Or you can roll out the whole dough at once and cut circles out of it with a glass. But this method leaves a lot of waste. But in any case, the choice is yours. Next, put the curd filling on each circle and fasten the edges.

So we need:

- kefir or sour milk - 150 milligrams;
- chicken egg - 1 piece;
- salt - 1 teaspoon;
- soda - 1 teaspoon (without a mountain);
- premium wheat flour - 300-350 grams (how much dough will take).

How to cook dough for steamed dumplings

You need to knead the dough for dumplings in a convenient deep container. First you need to mix salt, soda and egg. Beat them up a bit with a fork. Add warm kefir or sour milk. I have sour milk, which I got from homemade milk.

Beat the mixture with a fork until foam appears. This means that the acid, which is in kefir, extinguished the soda. The warmer the sour milk or kefir, the more active the mixture will foam, it may even run away from the container. Therefore, I recommend stirring the mixture over a plate or container with flour, in which you will knead the dough for dumplings with cottage cheese.

We choose wheat flour of the highest grade so that the dumplings are white and airy. Don't forget to sift the wheat flour.

Make a well in a bowl or bowl of flour to pour in the liquid ingredients of the dough. The recess is not deep, but sufficient so that the liquid does not escape.

In three glasses of flour, add a pinch of salt and a teaspoon (without top) of soda. Carefully pour in 220 milliliters of kefir, stirring at the same time. The consistency of the dough is as if playing in the hand. Since it does not contain eggs, in order to soften the gluten of the flour, it is thrown fifty times with force on the table. After that, the dough is allowed to rest for half an hour. During this time, you can prepare the filling. This method is not much different from the traditional one. The only difference is that the batch does the unit.   1. In fact, it’s very easy to cook and make everything if you start step by step to follow the recipe. It is required to take a deep small bowl into which you need to pour kefir and stir it well.
  2. In another bowl, beat the egg thoroughly with salt. It is important that the grains of the latter dissolve and do not meet at the bottom of the egg mixture. If this does not happen, then the dough may salt unevenly, and this will also affect the kefir dumplings themselves with potatoes or cottage cheese.
  3. Now we combine the beaten egg with kefir and add a little soda. With soda, the main thing is not to overdo it and not use vinegar, since, having interacted with kefir, soda without vinegar will give the desired effect.
  4. When the mixture is well mixed, you can start preparing the dough. Take a bowl into which we sift the flour. Flour should be 1 or higher grade, so the dough will turn out much softer. Now we make a small hole in this flour. Pour the egg-kefir mixture into the hole and proceed to knead the dough.
  5. Knead the dough very carefully, if necessary, slowly add flour to make the dough lush, elastic and hard.
  6. It is advisable to knead the dough with your hands, so it will turn out even better, although this is much more difficult to do.
  7. The finished dough should be dense in its consistency, and should not stick to hands and surrounding surfaces. Otherwise, you will need to add a little more flour, but do not overdo it. Too steep dough is not needed, the recipe does not achieve this.
  8. Now such a dough can be sent for 20–30 minutes to lie on the table under a napkin or cling film, after which you can make delicious kefir dumplings with potatoes and cottage cheese from it.
  9. To make dumplings, you will need to take the dough, cut off some part of it and roll it into a tourniquet with a rolling pin. Each resulting tourniquet is cut into small circles-coins and rolled out, but not very thinly, otherwise dumplings with potatoes or cottage cheese may break during cooking.

The second test preparation- roll out the whole large lump into a very thin layer no more than 3-5 millimeters. From such a layer, using a cup or glass, cut out circles. There are hundreds of recipes for the same dish on the Internet, in general, they are similar to each other, but still contain differences. And you never know in advance which recipe you will run into. So, in a long and hard process of trial and error, the “same” recipe is finally found. Why am I? I bring to the fact that everything is exactly the same with dough recipes. And in order not to search again and again, not to try and not make mistakes, I offer you a wonderful recipe for dumplings prepared on kefir that I personally tested.

Vareniki with this kefir dough are tender, but elastic enough to hold a juicy berry filling. This dough for dumplings on kefir has a delicate neutral taste and can be used in the preparation of both dumplings with sweet fillings (cottage cheese, cherries, strawberries, and so on) and unsweetened ones (potatoes, liver, mushrooms, meat, cabbage, and so on). It is a pleasure to work with such a test. It is supple, elastic, easily rolled out with a rolling pin.

We take a large container in which we will knead the dough for dumplings on kefir, and drive one egg into it. Immediately add a third teaspoon of salt and one teaspoon of sugar to the egg.


Whisk the egg with a whisk or just a fork. Add a glass of kefir (250 ml). If you have less yogurt than required for the recipe, you can safely supplement its amount with plain water. But still adhere to the rule that kefir should be more than half the required volume.


Add flour to the bowl. First, add two glasses and stir the dough with a spoon.


Then add the remaining flour in small portions (half a glass each) and continue to knead the dough for dumplings.


In the end, we transfer the dough to a clean table sprinkled with flour and knead the dough with our hands. If the dough sticks to the table, add a little flour (1-2 tablespoons) and continue to knead it until smooth and elastic. According to my calculations, the dough for dumplings on kefir has to be intensively kneaded for about 3-5 minutes.


But that's not all. In order for the dough to be ideally prepared for the process of making dumplings, it should rest for about 15 minutes. We put the dough for dumplings on kefir in a bag or wrap it with cling film to prevent drying and winding, leave it at room temperature for 15 minutes.
